I say this every year but I’m really not into Valentine’s Day. Call me a party pooper but I’m just not feeling the whole going to a restaurant filled with just couples who are there because they feel like they have to be, with an overpriced (for no reason other than that it’s Feb 14th) set menu where it’s not very likely there’ll be something I can eat from.
Also if Valentine’s Day is meant to be the day of lurve then I feel like I’d rather stay in and spend it with my two loves, my husband and little daughter (the latter of whom I don’t think would be so well received in a restaurant full of semi-romantic diners).
BUT some parts of V Day I can get on board with, namely;
- Strawberries & other pink foods
- Telling your loved ones how much you love them
So here’s a super simple but delish dessert made from chocolate and strawberries. It’s the best way of telling someone you love them IMO so it ticks all the boxes! Vday pressie sorted, and you get to enjoy it too!
For the chocolate
- 1/2 cup coconut oil, melted
- 3 tbsp maple syrup
- 4 tbsp cacao powder
For the cheesecake filling
- 1 cup cashews, soaked in water for at least 4 hours
- ½ cup frozen strawberries
- 4 tbsp maple syrup
- 4 tbsp coconut oil, melted
To make the chocolate base, simply melt the coconut oil in a bowl over a saucepan half full of water on a medium heat, then stir in the maple syrup and the cacao powder until you have a lovely, glossy chocolatey mixture. Spoon this into cake cases (placed on a tray or chopping board) so that they are half full (it should make about 10) and pop the tray/board in the fridge for them to set.
While they set, in a food processor or high speed blender blitz the filling ingredients until you have a smooth and creamy strawberry cheesecake mixture. Spoon this into the cake cases and place in the freezer for two hours (or more if you can bear it) to set. Drizzle with any extra chocolate if you fancy and then dig in!
