4 medium sized beets
2 Tbsp dark tahini
5Tbsp fresh lemon juice
1 small garlic clove
Sprinkle of paprika or any spice
Pinch of salt
Pinch of black pepper
½ avocado chopped and marinated in pepper, lemon and mixed herbs
If you are cooking the beets, cut off tops, scrub roots clean and put them in a covered dish with ¼ inch of water in 250 degree pre heated oven and cook until easily penetrated with a fork.
You can use pre-cooked beets from any supermarket
Combine all ingredients in blender and pulse until hummus consistency forms.
Paste on cracker/bread of choice and add avo on top!
