What nourishes our body best will change from season to season, day to day even, and we believe that respecting this is crucial to overall wellbeing. The health of our gut’s ecosystem can dictate everything from our immunity (our intestines contain more immune cells than rest of our body combined), to our mood (85% of serotonin is made in the gut), to our energy levels (healthy intestinal bacteria are crucial for the assimilation of vitamins and minerals within our food, keeping us nourished and energised).
High Mood Food was founded by Ursel Barnes. Ursel was brought up in West Berlin on homemade breads, fermented local food, and lots of yoga. Following her career in finance Ursel trained as an executive coach. She now works with highly pressurized professional clients and knows the critical difference a healthy diet makes to wellbeing on all levels, from professional performance to personal happiness.
My background is food; I’ve been a chef for ten years and have specialised in vegcentric cooking and fermentation. With a little salt, time, and microbial activity humble vegetables are entirely transformed. Even the most unassuming of ferments has awesome complexity of flavour, which can enhance any simple salad or quick stir-fry. Once you’ve tasted the savoury tang of fermentation (that’s the lactic acid bacteria) I truly believe you’re hooked..! Not only do dishes taste a little flat without it, but our bodies respond positively and powerfully to the healthy benefits it offers.
As Ursel says, “At High, we are not anti-anything, we just offer healthy ingredients and gut friendly dishes.
